Weeknight Dinner Made Simple!

A Delicious Easy Dinner - Tamale Casserole!

8pack of green chile pork tamales 2 cups shredded rotisserie chicken
2 cups of tomatillo salsa (from a jar)
2 cups manchego or other mexican cheese
sour cream
red onion, chopped

Preheat oven to 400. in a 9X13 dish lay out the eight tamales (husks removed).  Mix the chicken with the tomatillo salsa and spread over the tamales.  Top with shredded cheese.  Spray a sheet of foil with nonstick spray and cover tightly.  Bake 30 minutes.  Top with dollops of sour cream and red onion (or serve on the side)


Serve with chips and salsa and guacamole

It's really tasty, and really easy to put together.
