Tonight we had spaghetti squash, topped with a mixture of grilled onions, black beans, fresh salsa and cubed avacado. It was very tasty, and healthy!
Just cut the spaghetti squash in half lengthwise (scoop out the seeds and goop) and place cut side down on a microwave - safe plate, cook for 18 minutes. Meanwhile, cook 1 medium onion until tender, add the beans and salsa to heat through. Top with the fresh avacado, and place the whole mixture atop the spaghetti you've scooped out of the squash.
