Dressing in a Jar

This was a GREAT salad dressing and so easy to make.  It's from www.realsimple.com.

Use an empty 16oz jar, washed clean.  Add 1 chopped small shallot, 1 Tbsp honey, and 1 Tbsp Dijon mustard.  Pour in 1 1/2 cups EVOO and 1/2 cup vinegar or lemon juice.  Season w/salt and pepper.

Shake hard and serve.  It keeps for a week in the fridge.

It's delicious!

Heavenly

Tonite I just took chicken breasts (bone in, skin on) and tucked up under the skin slices of lemon, orange, sprigs of rosemary and thyme, and salt and pepper.  Then I drizzled them with olive oil and roasted in the oven for about an hour and a half (three large breasts) at 375 degrees.

They were simply heavenly...served with squash and green beans.


Sweet Potato Fries

Sweet potato fries - oven baked goodness - have you tried them?  Here's a recipe for you.  And try serving them with a spicy ketchup.  These are great as an appetizer or as a side dish!

Tasty Tostadas

Tonight was tostada night, and two things I hadn't tried before made all the difference!

Instead of buying pre-made tostada shells - make your own.  Heat a bit of oil in a small skillet and fry fresh corn tortillas til crisp, drain and sprinkle with salt.

And for the meat, add fajita seasoning from the Savory Spice Shop.  It's a cool place to find all sorts of seasonings....

Those two changes made the tostada meal (ground meat and corn tortillas) delicious with toppings of chopped tomatoes, onions, lettuce, cheese, and avacado (topped with lime and salt).

Pork for Dinner

Easy, tender pork on a bun - 

Place a 2lb pork tenderloin in a slow cooker with a bottle of root beer!  Let it cook all day until it shreds into tenderness.  Add a bottle of barbecue sauce, and serve atop a bun with coleslaw on top.

This was an easy dinner - especially since I bought coleslaw already made.

Corn off the Cob

I've recently learned two ways to shave the corn off the cob - both of which work like a gem!

Set the end of the corn in the hole of a bundt pan, then shave the corn off the sides as it falls into the bowl!



Lay the corn on it's side and cut off the corn, then turn the corn to that flat side and cut again.  Continue turning to the flat side until all the corn is off!

praline sauce

Tonight we had breakfast for dinner, on the floor as a picnic.  But then we had vanilla ice cream with praline sauce for dessert!  It was from GHK Magazine and so easy and so good!

praline sauce

2 Tb butter
1/2  cup light brown sugar
1/2 c heavy whipping cream
1 tsp vanilla
1/2 c chopped, toasted pecans

Just melt the butter in a saucepan, stir in sugar, cream and 1/8 tsp salt.  heat to boiling on med hi, stirring a bit, then boil 2 minutes, stirring frequently.  remove from heat and stir in vanilla and pecans.  serve with ice cream.

Crispy Sticks

I made these crispy fish sticks tonight - and they were so easy and sooo good!  I didn't try the coleslaw.  But the fish was a hit!  Be sure to get your oil hot, and let the sticks drain on paper towels - then season with a bit more salt!  I added some tartar sauce I just whipped up - mayo with chopped green olives and lemon juice!

Green and Good

I don't like snapping fresh green beans, because I rarely remember that I need to do it until it's almost dinner time, and I just can't snap them and cook them fast enough! I recently discovered these green beans in the produce section at Target, already snapped, so green and freshly washed - ready for cooking.

Just place them in water and bring to a boil, cover and simmer until tender (this takes a while).  Drain the water and season the beans, adding almond slices on top.

This side was a great hit at our last dinner party!

Slow Cooker Time

Found this slow cooker recipe book and bought it - for many reasons.  It has a picture with every recipe, and the ingredient list is not a mile long.  I bought it for a new mom, so she can put on her dinner early and forget about it until evening.   It has great reviews!  It's in the store at Barnes & Noble...and on line.

Fruit for You

This recipe is in the Forks Over Knives cookbook.  If you haven't seen the movie Forks Over Knives, I highly recommend it!

Fruit bowl:  Mix cubed cantaloupe, sliced strawberries, blueberries, orange segments and kiwi with orange juice, zest and juice of a lime, and chopped mint.  Very easy, tasty and healthy!
