The Best Pasta Supper

This was the BEST pasta supper we've had - maybe ever.  The recipe is from Pinterest for the pasta - and the olives and tomatoes make it super tasty.  For the zucchini, I just sliced it and fried it in olive oil (seasoned it first), and added the crust from some multigrain bread we had that was a bit dry.  I sliced off the crust and cut into pieces, added butter to the zucchini and browned both.

For Your Walls

Wall art can be expensive, and cheap wall art can be downright offensive, but inexpensive wall art that looks great can be found!

These three-piece art pieces are very inexpensive, and I found them at Ross.  One of them sits in a bedroom - and the other in the bath off the bedroom - which makes for a nice flow of similar pieces - yet different colors.  And they are one picture, separated into three pieces, which makes for a piece of interest.

Traveling Light

Just finished reading this book by Max Lucado.  We read it together as a couple at night, one chapter every few days.  Each one was FULL of good stories, truth, and an easy read - yet something that was so satisfying.  He devotes each chapter to burdens we carry and also references Psalm 23.  It's one of my favorite books...I'm going to read it again.  It's a great book to read with a friend...or by yourself...or with a group.

Muffin Cups

These were easy to whip up and contain all things healthy....I'm planning to cut one in half and toast it in the morning!

1 1/2 cups warm milk, 1/4 cup each of brown sugar and melted butter, 2 eggs, 1/2 tsp cinnamon and a pinch of salt - whisk these ingredients together.

Stir in 3 cups rolled oats, 3/4 cup each of dried cranberries and pepitas and 1/2 tsp baking powder.

Divide among oiled muffin cups, bake at 350 degrees til set.

(I used sunflower seeds instead of pepitas)

Ham/Leeks & Brussels

These pies are full of color and flavor and the recipe can be found by clicking here.

Leeks are really tasty, and I'm thinking these pies could be changed up to hold all sorts of ingredients, not just these in this recipe!

The side is brussel sprouts fried in 2 T butter and olive oil, then toss in chopped pecans until they toast, and add in lemon juice to brighten the flavors!

Pasta Delish

Just boil 1 pound of penne pasta, and while it's cooking do this:

Fry 1/2 lb diced bacon in 1 T oil for about 2-3 minutes, then add chopped broccoli florets (2-3 cups) (I also added some chopped brussels!) and 3/4 cup pine nuts and cook another 2-3 minutes.  Add 1 cup pasta water and cook another minute, then stir in 1 cup grated aged cheddar cheese.

Drain pasta and stir it in, and serve!

It's delicious!

I saw this hat today and really loved it - a STRAW baseball cap!  It's such a pretty color and will go with most everything this spring - from Urban Outfitters.  I've not seen one like it anywhere else, and it's so cute for those bad hair days, or when you want to look sporty!

Simply Delicious Burrito!

This is the simplest burrito - an old recipe my sis gave me a long time ago - easy and super delicious. They taste even better the next day!

Brown 1lb ground beef, drain.
Add in one can refried beans, one jar salsa, and stir to combine and warm.
Spread mixture on large tortilla, top with grated cheddar and roll up.
This makes about 7-8 burritos.

Wrap each one in a paper towel until ready to eat-  then heat and enjoy!

Sweet Potato Burger (with cashews)

This sweet potato burger I saw Clinton Kelly make on TV and I've been salivating ever since.  And it didn't disappoint - it was delicious!

I didn't have pickled red onions so I just topped the burger with more raw red onion and it was great!

Tastiest Salad Ever!

I saw her make it on TV and I couldn't stop thinking about the colors and the flavors as she described this Asian Salad.  I'm referring to Ree Drummond, the Pioneer Woman.

Here's what I used:

purple cabbage, sliced thinly
green cabbage, sliced thinly
scallions
english cukes
matchstick carrots
chopped cilantro
kale and spinach
peanuts
cooked spaghetti

I combined all of that in a bowl and set in the fridge.  I just used what I thought looked like enough for a large bowl full.  Then I made the dressing per her recipe, and kept it separate.  I packed the salad, and the dressing, and then used it as needed, when we were ready to eat...and I sprinkled a few more peanuts on top.

This was one of the tastiest salads I've ever eaten!

I was asked to make Disney Frozen popcorn balls for a party tomorrow, and I found this recipe that was so easy (the first one I found on Pinterest was complicated and didn't work!).

These could be made for any party, just substituting different colored sprinkles and M&M's.
