Corn Salsa Nachos

These nachos can be eaten hot or cold - they're tasty both ways.  We had them cold, because we took the ingredients and made them on the spot, on our picnic date out of the back of our car!

You'll need:

Chips
grated cheddar cheese
diced avocado
corn salsa

the corn salsa is 1 cup of fresh corn cut from the cob, mixed with 1 chopped jalapeno (no seeds), chopped red onion, and 3 T lime juice, salt and pepper.

Pack up the ingredients and layer the chips, cheese, corn salsa and avocado.

If eating at home, you can melt the cheese on the chips, then layer the other ingredients.

Best Candle for the Season

Appetizer sausage bites

These little sausage bites are great for a party - and the toothpicks in each one make them easy to eat!

You'll need:

8 brown n serve sausages (fully cooked)
1 tube crescent rolls
grated parmesan - 1/4 cup
dried oregano - 1 tsp
melted butter
toothpicks

preheat oven to 375 degrees.

unroll crescents and separate into four rectangles onto a floured surface, pinching together the perforations.  brush with the melted butter.  in a small bowl, mix the cheese and oregano, then sprinkle over each rectangle.

cute each rectangle crosswise with a pizza cutter to form 2 squares.  place a sausage link on the each of each square and roll up, seam on the bottom.

cut each rolled up link into 4 pieces, then secure with a toothpick.  spray a baking sheet with nonstick spray, and place bites seam side down on baking sheet about 1 inch apart.  bake 10-13 minutes until light golden brown.  leave toothpicks in for serving.

Mac and Cheese Cupcakes

Mac and Cheese Cupcakes These are so cute and tasty, and great for a party, because they're individual macaroni and cheese baked in muffin cups!  They take a bit of preparation, but this recipe makes 24 of these!  The base of the muffin is crushed Ritz crackers mixed with butter and cheese.  So yummy.

Spooky Fruit Cups

A super easy and fun idea for a pumpkin carving party!

Just buy oranges - one for each guess.  Slice a thin piece off the bottom so that the orange will sit flat.  Next, slice off the top and using a sharp knife and a serrated spoon, scoop out the orange segments and pulp, careful to leave the skin intact.

Cut out eyes and mouths.

Wash and drain your favorite fruit and fill! (I used grapes, strawberries and blackberries)

Spider Cookie

Preparing for our pumpkin carving party, we are making fun desserts.

This one was super easy.

Just make your favorite cookie cake recipe (we used chocolate chip) and spread it in a round pizza pan greased and lined with greased parchment paper.

After it cools, remove the parchment paper.  Next, make a spider web with chocolate frosting or black gel (I found it in the Halloween baking area at Walmart).

Make a black spider out of a pipe cleaner, add wiggly eyes, and place him on the web (be sure to remove before you eat!)

What to Do Dinner

We needed to go to the store, and I only had bits and pieces of ingredients in my fridge and vegetable bid...so what to do?!

This ended up tasting SO GOOD:

Here's what I had:

Cooked chicken
Yellow and red bell pepper
2 potatoes
1 sweet potato
1 onion
tortillas
1 can black beans
pepper jack cheese
4 cherry tomatoes

I diced the potatoes and put them in a skillet with hot canola oil to get them started.  Meanwhile I chopped the bell peppers and onion and tossed them in, as well.  I seasoned well with seasoned salt, salt and pepper, cumin and chili powder.  Not stirring them for a while, I let them sizzle and cook until starting to brown, and then I tossed in the other veggies.  Next, I added the cooked chicken and drained and rinsed beans (I only used about 1/2 can) once the veggies were tender and cooked until heated through.  When served, I topped with shredded cheese and sliced cherry tomatoes.

While all of that was cooking, in a separate pan I heated about 2 inches of canola oil.  I sliced tortillas into rectangles and when the oil was hot, I dropped in about 7 at at time.  They cook quickly, and I drained them on paper towels, dusting with kosher salt and lightly with chili powder.

Together it all made a meal!

Bowtie Spinach Beef Soup

This bowtie spinach beef soup is delicious and easy:

1 lb gr beef
3 garlic cloves minced
2 cartons (32 oz each) beef broth
2 cans (14 1/2 oz each) diced tomatoes w/green pepper, onion and celery
1 tsp dried basil
1/2 tsp pepper
1/2 tsp dried oregano
1/4 tsp salt
3 cups uncooked bowtie pasta
4 cups fresh spinach coarsely chopped
grated Parm

in a big stockpot, cook beef and garlic over med heat til beef is no longer pink, drain.  stir in broth, tomatoes and seasonings.  bring to a boil.  stir in pasta, return to a boil and cook uncovered til pasta is tender.
stir in spinach til wilted and sprinkle servings with cheese!

Caramel Fruit Dip

Four ingredients beaten together and you've got a tasty fruit dip: (from Taste of Home S&D)

1 package (8oz) cream cheese (softened)
1/2 cup caramel ice cream topping
1/4 cup honey
1/4 tsp cinnamon

Fresh fruit

Beat the cream cheese until smooth, beat in the caramel topping, honey and cinnamon - and serve!

Store in the fridge... (makes 2 cups)

Chicken & Rice Made Simple

This meal is simple AND delicious - baked chicken and brown rice - all from simple ingredients!

For the chicken...

Place four chicken cutlets in a greased pan and place pats of  butter on top of each one, season liberally with lemon pepper, and pour about 1/4 cup of Worcestershire sauce on top.  Bake at 350 degrees about 40 minutes or until chicken is done.

For the rice...

Prepare brown rice as directed (I used the pouches of instant brown rice - 2 pouches).

Meanwhile, chop a red pepper, a yellow pepper, and half an onion.  Heat butter and olive oil in a cast iron skillet and add the chopped veggies.  Stir and season with lemon pepper and season salt.  Grill until charred and tender.

Pour the veggies over the drained and cooked rice, adding in salt and pepper to taste.

That's it!

Orzo Cucumber Salad

I needed to make a side dish for a picnic and yet I hadn't been to the store, so I stared at my pantry and fridge and came up with what ended up tasting so good - an orzo/cucumber salad!

2 cups orzo, cooked according to directions, drained and cooled under cold water
1 large cucumber, diced
3 plum tomatoes, diced
4 scallions, sliced
1/3 red onion chopped
lemon juice (2 lemons)
chopped fresh parsley (1/2 cup)
olive oil
salt and pepper

Just take the cooled orzo and mix with the rest of the ingredients and taste it.  I had to add pepper and a bit more lemon juice and olive oil.  After sitting the fridge, it tasted insanely delicious a few hours later!

The Original Fried Pickle

I first had fried pickles long ago, before they were a popular item on many restaurant menus.  And I think over the years, I've perfected a pretty tasty recipe - but there are specific rules to follow:

Heat canola oil (med-hi) in a cast iron skillet about a half-inch deep.  Let that heat while you prepare the pickles.

Purchase dill pickles that are thickly cut (I like Best Maid brand).  Set up your station - a bowl of an egg/milk mixture, a bowl of seasoned flour (Cajun seasoning and season salt), and an empty plate.

Take out your pickles and drain them on paper towels and pat them dry.  Taking about 5 at a time, dunk them in the egg/milk mixture, then coat in the seasoned flour, then place on the empty plate.  After all pickles are breaded, test your oil to see if it's ready.  Place one pickle in the oil and if it sizzles, it's ready.

Using a large slotted spoon or wire scoop, take about 8-10 pickles, shake off loose flour, and carefully place in the oil.  Prepare a basket lined with paper towels to receive the fried pickles.

The pickles will brown pretty quickly, and when they do, use your spoon to turn them over (do not crowd the pan).

Carefully lift the pickles out onto the paper towels, and continue frying.

Lightly salt with kosher salt while hot, and before serving.

Now, instead of just Ranch dressing for dipping, I use mostly salsa (freshly made or fresh in the store's refrigerated section) and just a bit of dressing on the side.  Mix it as you dip - and it's most delicious!

There are the steps that must be followed in order to have crispy pickles that are not greasy and soggy and all stuck together!

Spinach Dip Sandwich

A most deliciously simple sandwich...

A loaf of unsliced multigrain bread from the deli
Freshly sliced turkey
Swiss cheese block, sliced thinly
Spinach dip from the refrigerated portion of the store
Lettuce

Slice two pieces of bread, and spread with the spinach dip, as you would mayo - on both slices.  Top with turkey, cheese and lettuce.


It's really good!
