This bowtie spinach beef soup is delicious and easy:
1 lb gr beef
3 garlic cloves minced
2 cartons (32 oz each) beef broth
2 cans (14 1/2 oz each) diced tomatoes w/green pepper, onion and celery
1 tsp dried basil
1/2 tsp pepper
1/2 tsp dried oregano
1/4 tsp salt
3 cups uncooked bowtie pasta
4 cups fresh spinach coarsely chopped
grated Parm
in a big stockpot, cook beef and garlic over med heat til beef is no longer pink, drain. stir in broth, tomatoes and seasonings. bring to a boil. stir in pasta, return to a boil and cook uncovered til pasta is tender.
stir in spinach til wilted and sprinkle servings with cheese!
