Oatmeal Cookies Deluxe


I found this recipe in a college cookbook - they are absolutely the best oatmeal cookies I've ever eaten!


Supersized Oatmeal Cookies

  • ½ cup shortening
  • ¼ cup butter or margarine
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 cup quick-cooking oats
  • ¾ cup semisweet chocolate chips
  • ¼ cup chopped walnuts, optional
  1. Preheat oven to 350°. Cream together the shortening, butter, and brown sugar well. Beat in the egg and vanilla extract.
  2. Sift the baking soda and salt into the flour. Add the ground cinnamon and blend well. Stir in the oats and chocolate chips.
  3. Shape 3 to 4 tablespoons of the dough into a ball about 2 inches in diameter. Place on the baking sheet, set well apart (6 balls to a tray). Press down gently with a fork. Press in a few walnut pieces in the middle, if desired.
  4. Bake for 13 to 15 minutes or until done. Let cool. Store in an airtight container.
