Two tasty chicken salads from Rachel Ray Magazine I tried and liked! So easy!
I roasted a package of chicken breasts, then cubed and split into two bowls:
California Salad BBQ Salad
chicken chicken
baby arugula chopped red bell pepper
cubed avocado chopped red onion
chopped pistachios grilled corn kernels
olive oil mixed with orange juice BBQ sauce mixed with mayo
served on grain bread serve on bun
