Black Bean & Carrot Quesadilla

For this tasty quesadilla, you'll need

Two large flour tortillas
1 can black beans, rinsed and drained
1 carrot - grated
juice of a lime
1 small jalapeno, seeded and chopped
2 slices Deli American cheese, sliced
Butter

Place the beans, carrots, jalapeno and lime juice in a bowl and mash with a fork until you have refried bean consistency.  Add salt and pepper to taste.

Spread bean mixture on half of each tortilla, top with slices of cheese, and fold in half.

Heat butter in skillet or griddle and cook the quesadillas until browned, then flip and brown the other side, on med heat to allow the cheese to melt and the beans to heat.

Using a pizza cutter, cut each one into three wedges and sprinkle with kosher salt.

Delish!
