These wraps are great for lunch and so easy to assemble:
You'll need:
Roasted red pepper hummus
handful of shredded carrot
spinach leaves
lemon
avocado
edamame cooked and cooled (soy beans)
spinach tortilla
Spread the hummus, then the carrots, spinach, avocado and edamame, sprinkle with freshly ground pepper, and give it a good squeeze of lemon juice.
Roll up and cut into 1 or 2 inch spirals, and enjoy!
