This recipe is adapted from my cast iron skillet cookbook Skillet Full.
Slice a jalapeno, place in a shallow dish with 1/4 cup fresh lime juice and 1/4 cup olive oil.
Rub chicken tenders with salt and pepper. and place in mixture to marinate for 30 minutes.
Meanwhile, prepare the citrus salsa - one orange and one grapefruit, peeled, sectioned and cut into 1/4 inch pieces, 1 jalapeno seeded and minced, 5 green onions chopped, 10 cherry tomatoes chopped and seeded, salt and pepper and another tablespoon each of olive oil and lime juice.
Grill the chicken in a greased cast iron skillet until browned and done on both sides.
Arrange mixed greens on a plate, top with sliced chicken (into bite sized pieces), and top with the salsa.
Absolutely fresh and delicious.
