These "smashers" are so good to make, and so tasty atop toast - for a picnic dinner!
Chickpea smasher - in a microwave safe bowl, mix together one can of drained and rinsed chickpeas with 2 Tbsp olive oil, 1 T fresh lime juice, 1 tsp each of ground cumin and coriander, and 1/2 tsp turmeric, 1 small grated clove of garlic, and a pinch of cayenne. Microwave for 1 minute, then smash with a fork or potato smasher. Season with S&P. Serve with cilantro leaves on top.
Avocado smasher - in a bowl smash two avocados with 1 T lemon juice and 1 small grated clove of garlic. Smash, then season with salt and pepper. Sprinkle more pepper on top.
White bean smasher - in a microwave safe bowl, mix one can of drained and rinsed cannellini beans with 2 T olive oil and 1 T chopped fresh rosemary. Microwave for 1 minute, then smash and season with S&P. Drizzle a bit of olive oil on top and sprinkle crushed red peppers.
Serve these atop toast or dip with pita chips - and enjoy!
