Foccacia Bread Salad

This salad is from Mario Batali's cookbook - it's just a few simple ingredients:

Focaccia Bread cut into cubes
Heirloom tomatoes diced
Cucumber diced
Red onion thinly sliced
olive oil
red wine vinegar
salt and pepper
freshly torn basil

Basically, toss the first four ingredients together.  Then add olive oil and red wine vinegar (2 parts olive oil to one part red wine vinegar).  Season well, top with the basil and toss.

Eat immediately.

I LOVED this - so fresh and yummy.
