What a sandwich! It's rich, so you may want to pair it with a side of fruit or a simple salad.
Process a few tortilla chips or pound to sand-like consistency and mix with softened butter to spread on the sides of sourdough slices.
Inside the sandwich, place a layer of guacamole, chopped tomatoes, grated Colby and Monterrey Jack cheeses, and cooked bacon slices.
In a heated non-stick skillet, place the sandwiches, chip/butter side down and cover, cooking about 3 minutes, then flip and cook on other side 2-3 minutes. Press with spatula to flatten sandwich after you flip.
You end up with a crunchy crispy crust and a ooey gooey inside with layers of flavor.
