Chicken & Veggie Pasta

This recipe is super healthy and full of fresh veggies!

You'll need:

Chopped celery (2 stalks), chopped carrot (1 large) and chopped onion (1 large).

2 tsp dried oregano, 1/2 cup chopped fresh basil, pulp of one baked sweet potato, chopped roma tomatoes (8), and 3 cloves garlic chopped.

1 lb chicken breasts cut into thin strips.

1 pkg rotini pasta

1/4 cup chicken broth

Place celery, carrot and onion in 1 T olive oil in a pan, and cook til tender. Add in the garlic and herbs and cook 2 minutes longer.   Toss in the tomatoes and sweet potato pulp, along with the broth and chicken, and combine.  Place a tightly fitting lid on the pan, turn down heat and cook 20 minutes til chicken is done.

Meanwhile, cook the rotini (in very salted water).

Toss the pasta with the chicken mixture and serve.

(This recipe needs more salt and pepper, and I think if I make it again, I'll grill the chicken (season it too) and place it atop the pasta dish, instead of boiling in the pan.)
