This salad is pretty...and tasty! (from Cooking Light Magazine)
For the dressing:
Place 1/2 cup avocado, 1/4 cup cilantro, 1 T lime juice, 1 T olive oil, 1/4 tsp salt and 1/4 tsp hot sauce in a blender and blend til smooth (or a small food processor)
For the salad:
Combine sliced radishes, halved grape tomatoes, mixed greens, and then drizzle with the dressing, and top with pumpkin seeds!
