Quinoa Salad

super delish - quinoa salad - here's how it goes:

Cook 1 cup quinoa

While it's cooking, blanch a handful of green beans til just tender, dunk in ice water to stop cooking, then cut into bite pieces

In a medium pan, in olive oil, cook a sliced shallot 3 minutes, add two mashed garlic cloves aand cook 2 more minutes. Remove from heat.

In a large bowl, mix:

Quinoa, green beans, 2 cups rinsed and drained chickpeas, 1 cup rinsed and drained kidney beans, and 3 T dried cranberries.  Add the shallots and garlic, and toss.

Add 3 T apple cider vinegar, 1 tsp ground coriander, 1 T raw honey, sea salt and fresh black pepper.

Serve topped with toasted walnuts!

(I ate it with fresh cut carrot sticks and a few crackers)
