Turkey Cranberry Panini

This was really a tasty sandwich, and it came together very quickly!

Make the cranberry sauce first:

2 cups rinsed fresh cranberries
1/2 cup orange juice
1/4 cup sugar

place orange juice and sugar into saucepan and heat until simmering, then add the berries. cook about 15 minutes until they burst and you can stir into a sauce.

in a bowl, mix berry sauce with 1/2 tsp cider vinegar, 2 tsp ground mustard, and 1 tsp olive and a dash of kosher salt.

meanwhile, on whole grain bread place:

slices of brie
slices of turkey

spray the bread with olive oil, and cook in a panini or pressed down in a skillet with a heavy cast iron on top.  cook about 2 min per side.

lift up one slice and insert the sauce and a few slices of fresh sage leaves.  cut in half and serve.

super crispy and oh so tasty!
